My granddaughter, who is “5 ½ and 3/4,” is one of the pickiest eaters I’ve ever met.  That usually doesn’t affect me, since she doesn’t visit very often, but her pickiness does make life rather difficult, when I’m trying to figure out meals.

She claims that she’s a vegetarian, but she’ll happily eat bacon and McDonalds hamburgers.  Hmm ….  Apparently, her idea of “vegetarian” is somewhat slanted.

So, yesterday, after making and decorating Christmas cookies, I was racking my brain, wondering what to make for dinner.  McDonalds got me thinking of Chicken McNuggets, so I asked her if she likes these.  Thankfully, she said yes!

This recipe comes from Martha Stewart.  It’s fast, easy, healthy and delicious.  I made oven fries and nuked some corn (I mean, what kid doesn’t like corn??).  After an entire day in the kitchen, making a royal mess and running the dishwasher 3 times, I wanted dinner on the table, presto.

Here you go:

Parmesan Chicken Nuggets

Chicken tenders, dried off

1 cup panko

1/3 cup Parmesan

Kosher salt

1 Tablespoon vegetable oil

½ cup all-purpose flour

3 large eggs, beaten

Cooking spray

Preheat oven to 400°.  Spread panko on a pie plate and bake until golden brown, 6 to 8 minutes.  Remove from oven and cool.

When cool, add Parmesan and ½ teaspoon salt; drizzle with oil and stir to combine.

Get out two more pie plates.  In one, place flour.  In the other, place eggs and beat them with a fork.

Turn your oven up to 450°.

Set a wire rack in a rimmed baking sheet; lightly coat rack with cooking spray.

In batches, coat chicken in flour, shaking off excess.  Dip in the eggs and then coat with panko, pressing to adhere.  Place on rack.

Bake until chicken is cooked through, about 10 to 12 minutes, flipping halfway through.

Serve with sauce.

Honey Mustard Sauce

Combine 3 Tablespoons Dijon mustard and 2 Tablespoons each mayonnaise and honey.

Spicy Ketchup

Combine ¼ cup ketchup; 3 Tablespoons spicy chili sauce, such as Sriracha; and 2 Tablespoons mayonnaise.
